I'm trying to write some code that will use resiprocate to act as a SIP
proxy.  The catch is that I need to be able to intercept the actual
audio data as it's going through the proxy so that I can do additional
processing on it.  What's the easiest way to do this?  I have a
DumThread up and running, but I haven't been able to find much
documentation yet about how to control the data flow.

SIP and media are not coupled like they are in SS/7 and/or TDM worlds. You use SIP to negotiate an end-to-end media session - therefore you cannot reasonably expect any server to see the media. It's a feature of SIP and makes it more scalable.
