svn co -r {2005-03-25} <url>
You can use the date syntax wherever a REV is required, so this is also
useful with svn update and other commands. See:

In general doing that won't be useful if you want to be able to commit
changes back because you'll have to update the working copy to HEAD
before the commit (and then fix whatever doesn't work). Useful for
avoiding head-instability for a little while though.
