If I needed my application to log or audit successful transactions, how can
I achieve that?

Yes, for the first scenario, there is no sense to have
a call back invoked since the NOTIFY will eventually
arrive.

For the second scenario, also there is no sense to
call back after receiving 200 for NOTIFY from the
server's point of view.
